Our Highland Series Whisky - Jessie’s Batch
 
This limited edition single malt whisky is inspired by traditional Scottish whiskies. Using peated malt barley, the mash was made locally at Longstocking Brewery in Pambula. It was then distilled into new make spirit here at the distillery before being aged in 50 litre French oak, ex-gin barrels for almost three years.
 
Sweet aromas of butter and dark chocolate on the nose yield to gorgeous caramel and warm toast flavours, with hints of nutmeg, oak and light peat. With a long, elegant finish, you can enjoy this smooth, beautifully balanced single malt neat or in your favourite whisky cocktail.
 
This batch is named after Jessie, the matriarch of North of Eden’s fold of highland cows. Born in September 2016, Jessie can be a little bit bossy, but she loves a brush and is, at heart, a quiet, gentle beastie. And while she may not be the fastest cow in the paddock these days, she’s still one of the prettiest (and she knows it!).
